The Manhattan series 7" sole knife is a very useful tool for filleting this type of fish, separating it from the bone with a high level of precision. In addition, it achieves cuts of exceptional quality thanks to its special silk fillet. It has been manufactured in Albacete, Spain, by expert hands in cutlery since 1734.
